Even though we haven’t updated this blog in, well forever, we are still going with our 2014 Whole Food Whole Life!  We have even planted kale – and once the rain stops we will get the next round of plants in the garden in time for all the winter vegetables we will want to eat.

On Thursday night we made kale and mint pesto and then last night we finally made some kale chips.  We’ve been wanting to try these for a while.

What you need: kale, salt, olive oil.

We picked a massive handful of kale and gave it a good wash and made sure it was completely dry.

Tossed it in a bowl and covered it in olive oil.  We have curly kale so you need to ensure the oil gets down in the curly bits.

Heat the oven to 180 degrees. Lay the piece of kale out on a baking tray, salt them lightly (or not, depending on your taste) and bake them for 8-10 minutes.

You can also add a little lemon pepper or some paprika. Enjoy!
