This was the easiest meal to prepare and quite honestly, hands down, the best tasting thing I have eaten in a long time (apart from the Burger King Steakhouse Bacon Burger that I ate on Saturday – sssshhhh!).
The recipe makes enough – for me – for two, possibly even three, meals
Chicken and Prawn Tom Yum
- 1 litre of water
- 4 tablespoons of Tom Yum paste
- 1 tablespoon of fish sauce
- 200g skinless boneless chicken breast – sliced
- 3 spring onions – sliced
- 150g of prawns
- Squeeze of fresh lime
- Fresh coriander
Boil the water. Add the Tom Yum paste and the Fish Sauce and stir.
Turn down to a simmer and add the Chicken Breast. Once the chicken is almost cooked, add the spring onions and the prawns.
Serve as quickly as you can with a healthy squeeze of lime juice and a fist of shredded coriander.
